It’s time to let politics take a back burner today. No book reviews in this post. No, it’s mead time.
I bottled the second cyser (apple & honey mead) last night. The first one I did was bottled several months ago. I wound up giving most of that one away to interested friends who wanted to know what it was like. I still have a few bottles left, but they will now age at least a year before I try them again. That should prove interesting.
This second cyser is made with Alaska wildflower honey. I think it has a much nicer taste than your average commercial clover honey. Wildflowers here include a mixture of fireweed, clover, iris, bluebells and many others. It’s hard to describe, but it’s a more interesting and complex taste.
This gallon only produced five bottles (and a little bit more for sippin’) because I was careless during racking and lost some down the drain. I’ll have to be a bit more careful with that. However, since I waited longer to bottle this time, the cyser is much clearer and has a less harsh taste than the first batch. I hope to continue this trend of improvement in the future.
